From humble beginnings in 2000 on a market stall in Cambridge (local flavour) has grown to be the premiere supplier of the region specialities then they took over river farm where the will smoke in oak chippings, cheese, fish and meat and almost anything we will require.

Meat

T & S Family Butchers. Tim has been a family butcher for many years and took over his shop in Godmanchester 6 years ago. His aim is to be the number 1 in the region and to source the best quality meat. He sources the very best pork from Suffolk, free-range chickens and his fantastic beef is from Gloucester. We will serve only the best meat in the restaurant for your consumption hence why we have chosen T&S Thomas for our main meat supplier.

Beef and pork

Bridget Borlase farms at Sacombe Hill Farm near Hertford. Pedigree Simmental cattle have been reared on the farm for many years.  Recently, a herd of belted Galloways has been added, to extend the range and quality of beef on offer to the customer. Bridget rears her cattle to very high welfare and environmental standards, with the cattle being grazed extensively on the farm's pastures.  Bridget follows the traditional method of hanging the meat to tenderise it and bring out the flavour. The quality of the beef is therefore second to none.
Bridget also rears pedigree Gloucester Old Spot pigs and British Lops. They are free-range, live outdoors and are fed on produce grown on the farm.

Poultry 

 S J Frederick & Sons is a traditional family farm in rural Essex. Who have a special interest in producing the quality of poultry that was common fifty years ago but which had all but disappeared in this country. Their free-range chickens and turkeys are 'old fashioned' slow growing strains that happily scratch around the fields. Unlike commercially produced poultry, Frederick birds are allowed to grow to maturity, which means the meat develops a proper texture as well as a muchbetter flavour.

Free-range Gourmet chicken
Inspired by what they had tasted in France, and guided by the memories of older members of the family, the Frederick have found a breed based on two traditional British breeds, the Red Cornish and the White Rock that is more suited to British conditions. When cooked, they believe our chicken tastes even better than the French product. The chickens are raised on their Essex farm, working to the most stringent standards to bring back the taste and flavour of years gone by.

  • Special, slow growing breed
  • Fully free range from five weeks old
  • High cereal vegetable diet, including 20% maize
  • Fed no antibiotics

Special Reserve
A combination of the best of the old with the best of the new. The breed is developed from the same female line as Label Anglais, but carries more breast meat, of a paler colour, than Label Anglais. Raised fully free-range from five weeks, fed a natural diet, and grown slowly to full maturity. The meat has a more delicate flavour and excellent texture

Peacock and Thompson have a fantastic understanding of quality; they buy fresh from Spitalfields and Covent Garden Market every night, giving us the finest and fresh produce we could possibly work with. They also buy from the greatest English growers in our region enabling them to supply (Best of British).

Cheese

A small, dedicated company, Premier Cheese takes great care in sourcing cheeses from Britain, France, and Italy. They also stock a vast range of high quality cured meats, oils and patisserie products, including fine artisan chocolate. They work only with the best hotels and restaurants, united in a commitment to serving the finest meals to their customers. Premier Cheese is always happy to share knowledge with chefs and front of house staff alike who in turn introduce the customers to a wonderful selection of farmhouse cheeses.

Free range eggs

Also on our doorstep is Alpha Farm in Hilton, Huntingdon. A family-run business with 11,000 free-range hens and ducks producing thousands of eggs per day, everything is carried out on the premises. They have their very own little farm shop which sells local honey, jams and chutneys.

T and J Fine Foods are based in Stamford and when we need specialist ingredients to get a recipe just right, they supply these specialist foods, often imported from world class producers across the UK and Europe.

Organic flour

Rebecca Rayner runs Glebe Farm at Kings Ripton Huntingdon. She provides a range of sustainable produced flours from her wheat and spelt crops. They mill the grains on-farm and use a local windmill. This is nature at its best.

Crisps and nibbles in the bar

Even our crisps and nibbles in the bar are made by Tyrrells, on a farm in Herefordshire from Lady Rosetta and Lady Claire which are renowned for their flavours. These are grown in rich brown fields surrounding the farm that make an award winning and delicious potato chip.

Unlike other mass produced crisps and nibbles, Tyrrells chips are produced in small batches using artisan methods. The finest potatoes and root vegetables are individually inspected, washed and peeled before being thickly sliced into pure sunflower oil, retaining all their natural juices and goodness.
